Serving Notes:

Add a little water and warm the risotto in a pot over a low heat, whilst stirring regularly until heated through, adding more water and adjusting the seasoning with salt pepper and lemon if necessary. Alternatively transfer the risotto to a microwave safe dish, add a little water and microwave on high heat for 2-minute intervals and stirring until heated through. Dress the side salad and adjust the seasoning to taste before serving.
